What are your 3 top tips for wine pairing?

 

What grows together goes together.

It’s a popular saying in the world of food and wine pairing. It means that foods and wines from the same geographic area naturally complement each other. For example, a Provence rosé will go perfectly with Mediterranean-influenced dishes from the South of France, such as Bouillabaisse or Salade Niçoise.

Temperature matters.

Make sure you serve the wine at the appropriate temperature, as it affects the wine’s flavour and the drinking experience. Too cold and the wine will lose its aromas and the acidity might become too prominent. Too hot and the wine might appear sweeter and the alcohol more pronounced. Provence rosés should be served around 10°C.

How do you pair your Mirabeau wines with food?

 

Provence rosé wines are incredibly versatile due to their balanced acidity, light body and freshness.

At Mirabeau, we produce more than 10 different rosé wines, and each has its own personality and flavour profile.

For example, our iconic rosé Pure is absolutely delicious with sea food and sushi, while our rosé Classic, slightly more robust, will be stunning with a roasted chicken with thyme. Etoile is more complex and gastronomic and will pair perfectly with shell fish such as scallops, creamy cheeses or fruity desserts.

 


How do you believe NUDE Glass enhances the overall experience of drinking Mirabeau?

How did you decide to partner up with NUDE?

 

NUDE craft flawless glasses that are both perfect in terms of aesthetic and technicity. Can you recommend any glasses from our Stem Zero collection to pair with your wines?

 

The Stem Zero Trio White Wine Glass is absolutely perfect to enjoy our still rosé wines such as Pure or Classic. The size is spot on, and the thin stem makes it so elegant.

If you’re a fan of our sparkling rosé La Folie, we’d suggest the Stem Zero Champagne Grand Cru Glass or the Stem Zero Flute Champagne Glass. They really bring the best in our sparkling rosé.


Which glass from our Stem Zero collection is your favourite and why?

 

It’s hard to choose, but it’d probably be the Stem Zero Trio Wine Glass. It looks stunning, and is also so versatile. From our still rosé wines to a G&T made with our Dry Rosé Gin, it really does it all.



How does wine harvest work?

 

The grape harvest (‘vendange’) in France can start as early as August and finish as late as the end of October, depending on how ripe the grapes are and which region they’re in. 

At Domaine Mirabeau, and at vineyards across France, there is a very rigorous testing process carried out to identify the exact point when the grapes have reached optimal ripeness. This is to determine when the optimal level of sugars (that will be turned into alcohol) have been reached, and if so, the perfect acidity level has to be gauged too.

We take maturity samples every week, which consist of picking 200 berries on each plot of vines on the domaine. We do an analysis of sugar content, acidity, pH, as well as tasting the grapes, to test the fruitiness and the bitterness to get the exact right balance.

In Provence, we harvest at night because the temperature is cooler. The 30°C daytime temperature common at the end of summer in Provence means that the temperature of the grapes on the vines is over 35°C. It would be too big a shock for the crushed grapes to go into vats in much cooler 14°C cellars.

What is your favourite NUDE Glass product?

 

In terms of non-wine items, we adore the Mist vases (that’s how we first discovered NUDE!), and also the Ilo candle holders. They’re both stunning pieces that feel extra special.
